| This casserole has proved very popular when I have served it up for lunch during the 1 day Pig Keeping Courses.
I use shoulder pork which is a very under-rated cut of meat.

| My February course was held on the 9th February and once again we were very lucky with the weather - which was mild, sunny & spring like.

| I held my first course of 2008 on the 12th January. It was a lovely cold, frosty & sunny day - which was a relief after all the rain we have been having. Even the mud was firm enough to make under foot conditions quite pleasant!!
